“The Fearrington House has long had the reputation of impeccable wine service,” says Beverage & Service Director Paula de Pano.

“Our team combines southern charm and warmth with the polished technical service fully integrated into the experience. We believe that you cannot do great service without getting the basics down. We may possibly be the least intimidating wine team in the country. We’re just a team of service professionals that love wine and want to spread the word.”

The Fearrington House Restaurant’s accessible beverage program includes a wide selection to accommodate different tastes – experience it with a cocktail or beer at the bar, or wine pairings with dinner.

Notes from Fearrington’s Beverage & Service Director Paula de Pano on how to best enjoy The Fearrington House wine list.

Wine Pairings take the guesswork out of the equation of dining from our guests who don’t want to go through an entire book of wines that we offer by the bottle,” says Paula. “It also lets our guests try different wines that they wouldn’t normally veer towards. Pairings can enhance the enjoyment of how that particular wine enhances a particular dish.”

The sommeliers at The Fearrington House taste all of the dishes on each seasonal menu and collaborate with the chefs to align the flavors of the dishes with the wines.

“When guests ask me how they should navigate the wine list, I let them know that it’s geographically-based from north to south, and varietally assessed by quality level if it exists for a region,” says Paula. “For example, Burgundy is such a confusing area, but the wine list is formatted in such a way that the list will be compartmentalized starting from Gevrey Chambertin down to Nuits St Georges for the reds, with the Grand Crus listed first down to village level quality for the wines.”

What about prices? “The wine list offers such a variety of bottles in different price points,” says Paula. “I think that we’re way past the era of not discussing what guests are comfortable spending. If a price point is introduced to the conversation either directly (saying it out loud) or indirectly (discreetly pointing out a wine’s price range from the list or even mentioning it during reservations), you’ll be surprised about how determined a sommelier can be to find the best bottle for you that suits your tastes and your budget.”

Meet the Team

Paula de Pano, Beverage & Service Director

Paula joined the Fearrington House in 2010 as a sommelier after graduating from the Culinary Institute of America in Hyde Park, New York. It was during her time at Fearrington that she received her Advanced Sommelier distinction with the Court of Master Sommeliers. In 2014, she moved to New York City to be part of the sommelier team at the three Michelin star restaurant, Eleven Madison Park. After two years, she returned to Fearrington Village as the Beverage & Service Director. Read more about Paula here.

Jesse Scott, Sommelier

Jesse, a North Carolinian native and resident of Chapel Hill, after working as AGM and head server at [ONE] restaurant came to join the Fearrington family in April 2016. He started his career in the hospitality industry as curb-hop and dining room server at his family’s restaurant. Now immersed in wine, he eagerly seeks to assist you in finding the perfect bottle to complement your experience at The Fearrington House Restaurant.

Laura Francis, Sommelier

Laura grew up in a family that enjoyed traveling and eating, so she understood the joys of the hospitality industry from a young age. While finishing up her bachelor degrees in French and Spanish, she began attending classes for certificates in Hospitality Management. Laura’s love for wine became stronger while working at the Biltmore Estate Winery, and she decided she would eventually become a Sommelier. Laura moved back to The Triangle in 2013, and began working at Herons, before moving to Ãn as Beverage Manager.
