Our Wine Team: Xavyer Burroughs, Maxmilian Kast & Kevin Collins

Fearrington’s wine experience extends throughout the entire Village Center. Here at Fearrington, we believe that food and wine are inseparable partners. This means we want guests to experience the magical experience of aromas, textures and flavors of food and wine combining in just the right way.

Wine Director Maximilian Kast oversees Fearrington’s wine program with the help of Sommelier Kevin Collins and Sommelier Xavyer Burroughs (also affectionately known as The Goat’s wine guru).

  • Bottled wines from small producers for purchase (most under $30)
  • Wines available by the bottle or glass
  • Rotating monthly theme for the wines by the glass
  • Check Xavyer’s blog to stay up-to-date on the monthly themes
  • Occasional wine tastings on Friday evenings from 6-7pm
  • 10% off when you purchase six bottles or more
  • Ability to special order wines (three bottle minimum) and create custom cases

Meet the Team

Maximilian Kast, Wine Director

Max joined The Fearrington House in 2007 as Sommelier, and within a year was promoted to Wine Director with responsibilities for the beverage program for the entire property. He organizes and hosts Fearrington House’s popular wine dinner series. And he also teaches popular and inexpensive wine and beer classes at The Fearrington Granary Restaurant. Kevin Collins, Assistant Sommelier

Kevin joined The Fearrington House in September 2012 as a food runner and quickly developed a passion for fine dining, top-notch service and beverages of all strengths and origins. He became a waiter in the summer of 2013 and moved to the wine team in May 2014 as Assistant Sommelier. He is Tar Heel born and bred, having been raised in Chapel Hill and graduating from the University of North Carolina at Chapel Hill in May 2012.

Xavyer Burroughs, Sommelier at The Goat

Born and raised in eastern North Carolina, Xavyer began working at the impressionable age of 15 as a dishwasher at On the Square Restaurant in Tarboro. Working with husband and wife team Stephen and Inez Ribustello, he developed a passion for food and wine and worked his way through every position in the kitchen and floor, lastly in the wine cellar selling, serving and studying wine. After passing his Certified Sommelier Course with the Court of Master Sommeliers in 2012, Xavyer joined Fearrington at The Goat. Check out his blog!
