One of the most exciting things about introducing the new Goat (now a deli, coffee shop and wine bar), is that we have had the pleasure of welcoming Xavyer Burroughs to the Fearrington Team. Xavyer has worked and studied under Inez Ribustello at her and her husband Steven’s fantastic Tarboro restaurant, On the Square. Risbustello is the former Wine Director for Windows on the World in New York and American Sommelier Society’s third place winner for “Best Sommelier in the United States” in 2009. Xavyer passed the Certified Sommelier Exam through the Court of Master Sommeliers in 2012, and at some point would like to sit for the Advanced Examination. He is a passionate wine professional, ready with a great recommendation at any moment.
So, about the new shop: We will be offering about 70 different wines in the wine shop, and will be offering seven wines by the glass that will change on a weekly basis. Wine will range from Monterey Pinot Noirs to Blanc de Noir of Nebbiolo from Valtelina, our goal is to offer great wines, from small producers and all over the world. I can guarantee that there will be a number of wines that you never heard of, and never thought even existed. Be assured each wine is made by a passionate artisan, and if you have any questions Xavyer is there to help out.
Thursday through Saturday night we will be offering some lighter dinner fair from 5-9pm, including cured meats, local and artisan cheeses, salads and sandwiches all crafted by Executive Chef Colin Bedford. We will also offer a wine tasting every Friday night so you can explore some of our options. We are very excited about this new project, and we look forward to talking to you about what we are passionate about: wine, beer and food!
