Food and wine can be inseparable partners; a magical experience
happens when the aromas, textures, and temperatures of the food and
wine combine in just the right way. The Fearrington House is pleased
to offer the option of either wine pairings ($35 for three courses
and $45 for four courses) or an extensive wine list by the bottle or
glass. Either way, enjoy select wines from uncommon grape varietals
and unique growing regions around the world, selected by Fearrington
House’s Sommelier and Wine Director,
Maximilian Kast.
The Fearrington House wine list features over 800 selections of fine
wines. Awarded the 'Best Of Award of Excellence' from The Wine
Spectator since 2004, Fearrington's extensive wine selection has
been created to complement the restaurant's sophisticated
contemporary cuisine.
Wine Pairing
How do we make the pairing selections to accompany your meal? Our
first objective is to find wine that fits with our cuisine.
Chef Colin Bedford changes the menu with the season, so wine
pairings correspondingly change as well. We look for the quality of
the wine, its personality, how it compares to other wines of its
same variety or region, and its overall value.
From there, we like to get the guests’ insight. For example, if a
guest expresses a preference for full-bodied dry white wines, we
might pair the DeTrefford Chenin Blanc from Stellenbosch, South
Africa with the Poached Pear Salad with Blue Cheese first course.
The acidity balances out the strength of the blue cheese and has a
ripe fruit taste to go with the pear. It is a dry full bodied white,
has a medium-plus acidity to balance the powerful flavors of the
dish, and is a memorable wine with lots of character.
Wine pairing lets us get to know the guest better. It gives us an
opportunity to bring more excitement to the meal, an opportunity for
us to surprise and delight the guest, and it gives the guest a
chance to explore wines from all over the world while enjoying a
meal in our dining room.
