The Restaurant Team at The Fearrington House, North Carolina's only
AAA Five Diamond Restaurant, is headed by Chef Colin Bedford, Food &
Beverage Director Maximilian Kast, and Maitre D' Joris Haarhuis. The kitchen team includes
French, English and American-trained Chefs who have studied at
prestigious culinary establishments including CIA and the French
Culinary Institute. The front of house team have gained
experience in many of the world's leading restaurants - all bringing
their exemplary service skills to this fine dining restaurant.

Colin
Bedford
- Executive Chef
A native of England, Colin came to the The Fearrington House in 2005
as Executive Sous Chef. Colin's culinary interest began early on, taking him to The Castle Hotel, Niagara on The Lake and
Prince of Wales Hotel. Colin continues the Fearrington House's
commitment to "Farm-to-Table" cuisine through partnerships with
local farmers, using the finest ingredients from the region and our gardens.

Maximilian
Kast - Sommelier and Wine Director
Originally from Michigan, Max was raised in a
family of German restaurateurs and specialty food producers. Before
joining The Fearrington House, Max was the Food and Wine Director at
Triple Creek Ranch, a Relais & Chateaux property in Darby, Montana.
He has a BA in history from the University of Montana in Missoula,
and passed the Advanced Test with the Court of Master Sommeliers in
August of 2009 making him a Master's Candidate. |

Tom
Whitaker - Sous Chef
Originally from Hexham in the North East of England, Tom began his
culinary education at Queen Elizabeth High School. After working in
some of the top restaurants in the region, Tom moved to the United States in
2006 and began working at The Fearrington House. Having had the opportunity to work with highly skilled chefs
for several years, Tom became Sous Chef in
2009. |

Tom
Pearson - Sous Chef
Born in York, where he studied at a catering college, Tom began
his culinary career there in a local restaurants. He then went to The
Star Inn before coming to the United States to join the Fearrington
House team in 2004. He became Junior Sous Chef in 2006 and then
returned to England for a bit where he worked in The Pheasant Hotel,
Harome, and the Michelin-starred Pipe and Glass Inn. Tom returned to
Fearrington in 2010 as a Sous Chef.

Jill
Leckey - Chocolatiere and Cake Designer
Jill joined the Fearrington House in 2005 as Chocolatiere
following training at The French Culinary Institute and the famed
Jacques Torres Chocolate Shop in New York City. In 2009, she
took charge of cake design for weddings and special events at
Fearrington as well. Her beautiful dessert creations and decadent hand-crafted chocolates are available at
The Belted Goat in
the Village Center.

Joris
Haarhuis - Maitre D'
Joris Haarhuis joined Fearrington in 1991 as an intern
from the Hotel School in The Hague, Holland. After completing
his degree in Hotel Management, Joris returned to Fearrington
to work as Guest Services Manager at the country Inn before moving
to the restaurant as Maitre D' in 1995.

Theresa Chiettini - General Manager
Raised in a family of Hoteliers, Theresa learned the intricacies of
managing luxurious hotels in both Europe and the Caribbean from a
very early age. After earning a degree in Hospitality Management
from the University of Central Florida, Theresa spent several years
at properties in the US and Europe including the prestigious Rafael
Hotel in Munich, Germany. Theresa has been with The Fearrington House
since April of 2000.
