Food and wine are inseparable partners – a magical experience happens when the aromas, textures and temperatures of food and wine combine in just the right way.
The Fearrington House is pleased to offer the option of several different levels of wine pairings or an extensive wine list by the bottle or glass. Either way, enjoy select wines from rarely encountered grape varietals and unique growing regions around the world, selected by The Fearrington House’s Wine Director, Maximilian Kast.
The wine list features over 1,000 selections of fine wines. Awarded the ‘Best of Award of Excellence’ from The Wine Spectator since 2004, Fearrington’s extensive wine list has been created to complement the restaurant’s refined contemporary cuisine.
How do we make the pairing selections to accompany your meal? Our first objective is to find wine that fits with our cuisine. Chef Colin Bedford changes the menu with the season, so wine pairings correspondingly changes as well. We look for the quality of the wine, its personality, how it compares to other wines of its same variety or region, and its overall value.
“From there, we like to get the guest’s insight,” says Max Kast. “For example, if a guest has a preference for full-bodied, dry white wines, we might pair the DeTrafford Chenin Blanc from Stellenbosch, South Africa with the Poached Pear Salad with Blue Cheese first course. The acidity balances out the strength of the blue cheese and has a ripe fruit taste to go with the pear.”
Max adds, “Wine pairings lets us get to know our guests better. It gives us an opportunity to bring more excitement to the meal, to surprise and delight the guest, and it gives our guests the chance to explore wines from all over the world while enjoying a meal in our dining room.” By customizing wines, not only to Chef Bedford’s cuisine, but also to each guest’s personal preferences, the end result is a culinary experience – rather than just a delicious dinner.
