At Fearrington House Restaurant

In January, Fearrington’s wine team began a project to include more organic, biodynamic and sustainable wines on the by-the-glass list at The Fearrington House. This season marks the third cycle of these new selections. Wine Director Maximilian Kast says guests are pleasantly surprised when they find out how much thought is put into the by-the-glass slections. “Not only are the wines delicious and from artisan producers, but they are made by farmers who are looking out for environmental future of their farm and region.”
Fearrington has been a green certified restaurant for quite a while, and including organic and sustainable wines seemed like the right natural progression. “We have a growing local wine industry in North Carolina and in Virginia, so we make exceptions there so we can support local – which is also beneficial to the environment,” Max said. “However, since the best wines in the world come from a great distance from us we view it as our responsibility to promote those that make the extra effort in relation to the environment.”
Although this project cuts down on the amount of wine to choose from – since not every producer fits the eco-friendly standards – the advantages outweigh the them. There is a growing trend of distributors who are now looking through their portfolios and building lists of organic, sustainable, and biodynamic producers that they source from, he said. There are some aspects of this project which can be difficult, “but our guests appreciate the effort, and it gets people to think a little bit more about what is in their glass, and about how wine is an agricultural product. There is a process to its magic.”
