Wood-Fired Pizza is Here!

The first time we talked about pizza we were in Atlanta at a pizza joint called Antique pizzeria. I knew this would be the perfect addition to Roost…what could go better with beer and live music than wood-fired pizzas?

When people think about chefs, they think we can do everything, but pizza isn’t really in the realm of what “I do.” It’s new to me. I did a massive amount of research and then I started experimenting. From the sauce to the dough to the toppings, I wanted it all to be perfect. So three tries here and four tries there to get the structure just right. Now we finally ended up with a final product that I’m excited about.

So what’s on the menu?

RED
Mozzarella, Tomato, Basil $10

Veal, Asparagus. Asiago, Arugula, Confit Garlic $16

WHITE
Cauliflower, Pinenut, Raisin Jam, Capers, Bread Crumbs, Pecorino $12
Zucchini, Kale, Onion Jam, Broccolini, Pesto, Ricotta, Parmesan $12
Four Cheese with Ricotta, Provolone, Parmesan, Fontina $14

And a weekly special! Last week’s special was a Lobster, Mascarpone Cream, Aged Gouda, Fennel, Tarragon & Watercress pizza!

Summertime Brew

Wine Director Maximilian Kast and Sean Lilly Wilson of Fullsteam Brewery have released their latest brew-concoction. This summer throughout Fearrington Village we will have the Fearrington-Fullsteam Summer India Tea Ale on tap. This beer is a session IPA made with tea grown by our neighbors in South Carolina.
