At Fearrington House Restaurant
November 29, 2016 9:30 AM | By Village Confidant | No Comments
The Fearrington House Restaurant‘s fall menu is underway and pairs perfectly with the arrival of fall weather. Executive Chef Colin Bedford is continuously incorporating more farm-to-fork items with each menu – this season features turnips, carrots, herbs and more from Fearrington’s gardens, as well as local meats and produce. The Sea Bass in this dish are sourced from the North Carolina coast, and the pasta is made at Fearrington!
The Black Burgundy Truffles used in this dish have a very earthy and distinct flavor, and are folded into the pasta sauce. Truffles are considered a luxury item. Did you know some of the most expensive truffle varieties are White Alba Truffles from Italy, and Black Périgord from France? Some truffles come from as far as China, although there are a few local varieties from Oregon.
Also featured in this dish is the Jerusalem artichoke, also known as sunchoke. This sunflower species’ tuber is used as a roost vegetable – it also happens to be Chef Bedford’s favorite vegetable! The sunchoke in this dish is roasted whole and cooked in butter.
Don’t miss out on the flavors of the fall menu – make a reservation today!
