Reflecting on our Summer Gardens

The Fearrington Gardens have had a busy summer producing vegetables like eggplant, cucumber and so much more for our dishes at The Fearrington House. We sat down with Junior Sous Chef Zac to find out how the gardens performed this season, and what’s being planted next!

As a whole how did you feel about the first major season incorporating the garden and The Fearrington House menu?
When we planned the summer menu we focused our efforts on tomatoes, beans, tomatillos, cucumbers and we were able to provide the Fearrington House restaurant with a bounty of these items. We also tried to experiment with other items that made for a very exciting summer menu. Overall, the summer garden was an amazing success and has motivated us to expand the garden this fall.

Looking ahead, is there anything you’ll do differently next summer?
Next summer I want to look at expanding the total area we have for the garden so that we can grow even more. I would also like to have a fully installed irrigation system by next summer so we can help relieve the plants from some of the summer heat. I would also love to find more time to prune more of the tomatoes and peppers to help increase their yield.

Any advice for home gardeners on how to push through the summer heat and keep the garden happy?
Summer is an amazing time to garden because of all of the produce possibilities, but can be very challenging because of the heat. It is important to pace yourself as a gardener and find strategic ways to succeed. I find that watering at night helps both the garden and the gardner stay cool.

Meet Our Bees

Have you heard the buzz? Of our bees, that is! Fearrington is now home to four bee hives, which produce the honey for The Fearrington House menu and for our Fearrington House-to-Home take-home honey.
