Xavyer Burroughs, Sommelier at The Goat

Born and raised in eastern North Carolina, Xavyer began working at the impressionable age of 15 as a dishwasher at On the Square Restaurant in Tarboro. Working with husband and wife team Stephen and Inez Ribustello, he developed a passion for food and wine and worked his way through every position in the kitchen and floor, lastly in the wine cellar selling, serving and studying wine. After passing his Certified Sommelier Course with the Court of Master Sommeliers in 2012, Xavyer joined Fearrington at The Goat. Check out his blog!

Wine for your Valentine!

It’s always nice to give a Valentine’s Day gift you can both enjoy!  Sant’ Evasio’s Brachetto D’Acqui is a pleasantly sweet sparkling red wine, made similarly to Moscato d’Asti.  In the glass, soft red flowers, muddled cherries, and raspberry liqueur are prominent on the nose and palate, with a few gentle bubbles dancing around in the background.  This will be perfect with all of those dark chocolate treats you are going to be feeding each other! ...
